Picture this: You just got home from work, super hungry and too tired to cook. Then you remember it’s January and one of your resolutions is to eat clean. It has happened to the best of us forcing us to come up with easy, quick yet healthy recipes.
Below is a modified Chicken salad recipe made mostly from left overs.
CAESAR SALAD RECIPE
Ingredients
2 slices of bread (preferably a day old)
Extra virgin olive oil
Fat-free bacon, thinly sliced
1 lettuce (tear pieces)
2 hard-boiled eggs
Left over boneless chicken
40g shaved Parmesan cheese
For salad dressing
1/2 cup light mayonnaise
1 garlic clove, crushed
2 tablespoons lemon juice
Method
Step 1- Heat pan and place your slices of bread (thinly spread with butter) and leave it on there for 2 minutes each side. When done cut it into pieces.
Step 2- Make Caesar dressing: Process mayonnaise, left over boneless chicken cut into tiny pieces, garlic and lemon juice until smooth. Then season with pepper.
Step 3- Heat a frying pan over high heat. And cook your bacon stirring until crisp.
Step 4- Place lettuce in a large bowl and add your croutons, bacon, cheese and boiled (roughly sliced) and your salad dressing and toss.
Enjoy your balanced meal.
