Surviving January with Yummy Sautéed Cabbage

Cabbage is not a bad meal as many often to make it seem. Its infact a very nutritional powerhouse that deserves a place in a balanced diet. Packed with vitamins C and K, as well as fiber, cabbage contributes to immune system support, bone health, and digestive wellness.

Perhaps it’s the preparation that has unfairly tarnished cabbage’s reputation. This January, amidst tackling tax season and economic challenges, let’s rediscover the potential of cabbage by preparing it in a way that leaves you craving more.

Here’s a simple and delicious recipe for sautéed cabbage:

  • 1 medium-sized cabbage, shredded
  • 2 tablespoons olive oil or butter
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika (optional, for added flavor)
  • 1 tablespoon apple cider vinegar

Instructions:

  1. Prepare the Cabbage:
    • Remove any tough or wilted outer leaves from the cabbage.
    • Cut the cabbage in half and remove the core.
    • Cut the cabbage into thin strips.
  2. Sauté the Aromatics:
    • Heat olive oil or butter in a large pan in medium heat.
    • Add thinly sliced onions and sauté until they become translucent.
  3. Add Garlic:
    • Add minced garlic to the cooking pan and sauté for about 30 seconds until it has a nice smell.
  4. Sauté the Cabbage:
    • Add the cabbage to the cooking pan. Toss everything together to coat the cabbage with the oil and mix with the onions and garlic.
  5. Seasoning:
    • Season the cabbage with salt, black pepper, and paprika (if using). Adjust the seasoning to taste.
  6. Cook Until Tender:
    • Sauté the cabbage over medium heat, stirring frequently, until it becomes tender. This usually takes about 5-7 minutes.
  7. Finish with Vinegar:
    • If desired, add a splash of apple cider vinegar to the cabbage during the last couple of minutes of cooking. This adds a nice tangy flavor.
  8. Serve:
    • Once the cabbage is tender and cooked to your liking, remove the cooking pan from heat.
  9. Enjoy:
    • Serve the sautéed cabbage as a side dish alongside your favorite main course.
